Eggs Cocotte

A healthy breakfast to get your veggies and eggs in! These can be totally customized with any kind of veggies or meat you have..

Ingredients:
Eggs: 4
Spinach, chopped -  1/2 cup
Onions, chopped - 1/2 cup
Garlic, grated - 4 cloves
Chilli Paste (like Sriracha) - 1/8 tsp
Milk - 2 Tbsp
Crushed Red Pepper - 1 tsp
Parmesan - 1/4 cup
Salt, to taste
Pepper, to taste
Method:
  1. Preheat oven to 400 degrees.
  2. Divide the onions, spinach and garlic between the ramekins. Add salt, pepper, chilli paste in each and mix.
  3. Add one egg in each ramekin and top with 1/2 Tbsp of milk in each.
  4. Season with salt, pepper, crushed red pepper and parmesan or gruyere cheese. 
  5. Pop in the oven for about 6 mins for half cooked and 15 mins for fully cooked egg. 
You can top it with crumbled crispy bacon or chicken to get an extra crunch!

Mini Breakfast Ramekins

Eggs and mexican on a weekend morning goes great together and here's my simple and tasty mexican breakfast ramekins with the stuff you probably will find in your pantry already!

Ingredients:
Eggs - 3
Egg whites - 3
Salsa - 1 cup
Milk - 4 Tbsp
deli turkey slices - 4
Cheese, shredded - 1/2 cup (any variety)
Roasted peppers - 1 cup
Roasted chillies/Jalapenos - 1/4 cup (optional)
Salt, to taste
Pepper, to taste
Crushed red pepper, to taste

Servings: 4 (6oz) ramekins

Method: 
  1. Preheat oven to 400 degrees.
  2. Take small ramekins, or any size according to your number of servings and spray on some non-stick cooking spray. 
  3. Beat together eggs,egg whites, milk, salt and pepper.
  4. Evenly distribute the following from bottom to top in layers in each of the ramekins.
      • Salsa
      • Roasted red peppers
      • Roasted chillies/Jalapeños
      • Smoked turkey breast deli slice(s)
      • Egg mixture
      • Cheese
  5. Bake in the oven for about 25 mins for 6oz ramekins and more if you're using a larger one until a fork comes out clean and the top browns to golden. Serve hot. 
To my surprise, this was one of my little picky eater's favorite breakfasts :)
And this is a perfect breakfast if you have a some time in your hand since baking takes about 30 mins. But you can get absolutely creative with this dish and add any kind of meat or layering that you like.

Spanish Tortilla


I've been thinking for a while to have a common place to share recipes and ideas with friends..and finally, here I am with my first post..

Weekends are when I experiment with all the knowledge acquired from watching food network :) and test it out on my husband and daughter.
So I watched this episode where they made a dish called Spanish tortilla. As the name suggests, this has nothing to do with traditional tortilla.

Most of the time, I don't have the ingredients that they use..So I mostly try to swap it with something that I think is close enough and many times it turns out to be not so bad.

Suggested substitutes:
For Eggs - Egg beaters/Egg whites
For Chorizo/Salami - Any meat. (Sautéed and cubed Chicken, Shrimp or fish). I dint have any meat.
Cheddar cheese, shredded - Any cheese that you have
Green onions - Bell Peppers - I dint have both, so I skipped :)

I did not have any meat, so I warmed up 2 morning star frozen veggie patties as per instructions and chopped into tiny pieces and added it. You can even add any leftover meat or veggies instead..
Since I have a 16month old daughter at home who can barely eat spices, my version is pretty bland..If I made it just for adults, I would've added some red/green chilly sauce to spice it up a lil bit..
The cooking time was almost 40 mins for me..I don't know if it's because of the eggbeaters instead of real eggs.
But it turned out to be really good..My husband and I loved how the potatoes tasted in the egg mixture..it was awesome.
Since this is my first post, all that I have is leftover that my husband attempted to take a pic of.. :)
